A typical gujarati dish and a favorite of most who have tasted it. The soft cooked potatoes along with the almost mashed eggplant, makes this dish very juicy and delicious. It is typically served with thepla’s in a gujarati household. Hot phulka’s also go very well with this dish.

A Goan dish, inspired by Madhur Jaffrey and my brother who loves vindaloo with meat additions. I was so curious as to how this dish would taste with a vegetable. The best bet vegetable I could try was a mushroom which could give a flavor which my brother described.

A favorite accompaniment with dosa’s, idli’s, upma’s, a sandwich spread and anything you want to experiment it with. The sweet nature of the small onions enhances the taste of the chutney. If small onions are not available, regular red onions can be used. The sesame oil used for seasoning and sautéing enhances the flavor as well. In case you don’t stock sesame oil, any vegetable or sunflower oil can be used.

A favorite gujarati snack bread. Sit in a long distance train and if you find a Gujarati, you will find theplas. Just as said, its a great travel food, like a baguette is to a French man. You can eat it just about anywhere without any accompaniment, giving you the satisfaction that you have actually had something substantial to eat.
