Spiced Apple Banana Cake
A cake with a twist. The chunky pieces of apple and banana, make this cake moist and delicious. Savour it warm with a hot cup of freshly prepared coffee. Bake it in muffin cups and can make a healthy snack for kids.
Makes: 9 inch Diameter cake Serves: 12 pieces
Cooking time: about 45 minutes Preparation Time: 30 minutes
Ingredients
- 1 cup sugar
- 1/2 cup unsalted butter (room temperature)
- 2 cups all purpose flour
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups chopped apples
- 1/2 cup mashed banana
- 1 cup chopped walnuts (toasted)
Method
Preheat oven to 180°C. Butter and flour 13×9x2-inch metal baking pan.
Beat sugar, butter, eggs, and vanilla extract in large bowl until smooth. Add flour, cinnamon, baking powder, and salt. Beat just until blended.
Stir in apples, bananas and walnuts.
Transfer batter to prepared pan. Bake cake until top browns and tester inserted into center comes out clean, about 55 minutes. Cool in pan.
Cut cake into squares and serve warm with freshly prepared hot coffee.
Note
The baking times might differ from oven to oven. So keep a watch on the cake, after half hour of baking insert a clean knife to check if it comes out clean. If it does not come out clean, allow it to bake for some more time. If you understand your oven well, then this cake should come out flawless.

Lovely looking cake - I like the idea of banana in it; I imagine it would make it very moist.

yes very moist with a crusty crust. Best tasted when warm out of the oven, like most fruit cakes.
