Low fat version of this broccoli soup is delicious and nutritious.Broccoli is a fiber rich food. Not only is it rich source, but half of its fiber is insoluble and half is soluble, helping to meet your needs for both types of fiber. Broccoli’s noteworthy nutrients include Vitamin C, Vitamin A, folic Acid, calcium and fiber.

 

So go ahead and indulge in this tasty soup with with crusty whole grain bread. Kids will love this soup as well, and provide  them with a whole range of nutrition.

Serves: 4 persons

Cooking time: 20 minutes Preparation Time: 15 minutes

Ingredients

  • 3 cups of broccoli florets with stems
  • 1 tablespoon butter
  • ¼ cup chopped onion
  • 2 cups fat-free milk/low fat milk
  • 2 cups water or vegetable broth
  • Freshly ground black pepper
  • Salt to taste

Method

Heat oil in large saucepan on medium; onion until tender

Add broccoli and 1/4 cup of water; simmer until tender and cooked.

Allow it to cool. Add milk, water/broth, salt and broccoli and puree in a blender until smooth.

Transfer to a sauce pan and bring to a boil and simmer for few minutes. Add pepper to taste

Serve warm with a crispy warm bread
