Smoked Baby Corn Bruschetta
Bruschetta is usually served as a snack or appetizer. It is one of the simplest things in the world to make, and can be very satisfying if you have good extra virgin olive oil. Typically bruschettas are topped with tomatoes and basil leaves, but this recipe is a delicious alternative to the traditional recipe.
This recipe requires a piece of coal about 3 inches big for the Smoking Method



Ingredients
- 1 ciabatta loaf cut in thin slices (you can use a fat baguette as well)
- 1 teaspoon chopped garlic
- 1 tablespoon extra virgin olive oil
- 1 cup of thinly sliced baby corn
- ¼ cup of chopped tomatoes
- A few torn basil leaves
- Rock salt and freshly milled black pepper for taste
- Goat cheese (or mozzarella cheese)
Method
Preheat the oven to 220 C
Prepare the coal by heating the coal on gas flame until it turns red hot and grey
Heat the olive oil in a pan; add garlic, baby corn, bell peppers, salt and pepper, sauté for a few minutes.
Make a well in the centre and place the coal in a glass/ steel bowl and place the cup in the well. Pour a teaspoon of oil or ghee on the coal. It will begin to smoke. Immediately cover the pan and reduce the heat to low and let it sit for about 5 minutes
Turn off the heat. Add the torn basil leaves to the corn mixture. Layer the smoked corn on each slice of bread and then with crumbled goat cheese or mozzarella.
Place the bruschetta in the oven and bake until the cheese melts. Serve hot.
