Eggplant in Yogurt Gravy (Dahiwale Baingan Ki Sabzi)
An extremely tasty dish. I had this dish at a birthday party dinner; from then on this has been one of my favorite eggplant dishes. The combination of eggplant and yogurt combined with the bell peppers makes it a hot favorite.
Serves: 6 persons
Cooking time: 30 minutes Preparation Time: 15 minutes

Ingredients
- 1 large eggplant diced or sliced length wise
- 1 teaspoon chopped ginger
- 1 teaspoon chopped garlic
- 1 cup baby tomatoes or 1 cup diced normal tomatoes
- ½ cup diced onions or sliced length wise
- 1 cup diced green bell peppers/green capsicum or sliced length wise
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 2 tablespoons gram flour
- 1 cup yogurt
- 2 cups water
- 2 tablespoon chopped coriander for garnishing
- 3 tablespoons vegetable/sunflower oil
- Salt to taste
Method
Heat 2 tablespoons oil in a large pan in and sauté the eggplant. Simmer it until the eggplant is soft and tender.
Whisk salt, yogurt, gram flour, water, garam masala, turmeric powder. Set aside.
In another pan heat 1 tablespoon of oil; sauté the ginger, garlic, onions, and bell peppers until tender.
Add the cooked eggplant, tomatoes and yogurt mixture to the above onion bell pepper mixture.
Simmer for another 10-15 minutes until the tomatoes are tender.
Garnish with coriander leaves and serve hot with desired bread.

My husband loves yogurt curry and I normally put Bottle gaurd (Lauki) and its over even before I make the rotis if he is around. Will surely try it with eggplant I am not a big fan of bell peppers but my husband is so will put them in for him.
