Spicy Pumpkin Soup
Low fat version of this pumpkin soup is delicious and nutritious. Serve with warm garlic bread. The touch of cinnamon and coriander is the light for this soup. The story behind the tree you see in the photograph - I was sitting in the balcony drinking my soup, with the tress swaying and was wondering how can I photograph this soup. Ola, the swaying trees, sparked my idea!

Serves: 4 persons
Cooking time: 10 minutes Preparation Time: 10 minutes

Ingredients
- 3 cups of chopped cooked pumpkin. See Cooking Vegetables
- ¼ cup chopped onions
- 2 teaspoons minced garlic
- A pinch of cinnamon
- 2 cups water
- 1 cup of milk
- 1 tablespoon of butter
- 2 tablespoons of chopped coriander/ herb of your choice
- Salt and ground black pepper to taste
Method
Melt butter in a saucepan over medium heat. Add onions and garlic;saute until tender. Turn off heat.
Add to the cooked pumpkin; the onion garlic sautéed mixture, pepper, cinnamon, salt, water, milk and blend it until smooth.
Transfer to the saucepan and allow it to boil for a few minutes.
Garnish with coriander or herb of your choice and serve it with warm crusty bread.
Tasty Tip
This soup taste delicious with some extra crushed ground pepper before serving!

Wow! This looks so delicious Archana. I was thinkin of making pumpkin soup yesterday instead I ended of making french onion soup , after seeing your recipe I think am gonna try this. looks very nice.

Yes the muffins in mine were yummy as the pumpkin ones you had made and served your friends.Try with papaya if possible.I will go for pumpkins soon

The tree has a story. The photo was taken on a cold gloomy day with just enough natural light. When I was drinking this soup, I was in the balcony, looking at some trees swaying with the wind. That’s when I immediately got up, took a bowl of soup, placed it on my coffee table, made a tree of coriander leaves and cinnamon stick - the ingredients added to the soup. I was trying hard to get the shadow of the tree as well. But with minimum natural light conditions, i managed to capture what I had in mind.
