A delicacy in a Gujarati household and in almost every traditional Gujarati function. The potatoes are simmered in spiced tomato gravy. My mother in law adds Kalonji seeds (onion seeds) and I notice that this adds to the flavor of the dish. The potatoes are so well cooked along with the spicy tomato gravy; that this process of cooking allows the little starch from the potatoes to thicken the gravy as well.

A typical dish from Calcutta and a dry vegetable dish with a Gujarati touch adopted from my mother in law. Parval is very popular among the Bengali Cuisine and a healthy vegetable, especially in the form of soup for stomach related ailments. The crispy nature of this vegetable even after it has been cooked along with potatoes, gives the special taste and crunch.

This really mushy preparation of this healthy vegetable tastes great with phulka’s. I have been experimenting with this vegetable to make it tasty and yet retain its nutrition. Inspired by a friend and neighbor who taught me how to make this gourd tasty. Its very interesting to note that, it requires minimum amount of spices and yet its delicious.
