popular south Indian dish is make from deep frying finely ground urad dal. Traditionally this vada is typically fried plain with some whole pepper corns or green chillies. But this recipe uses finely chopped cabbage and onions which simply exemplifies the taste of the vada.

Chilla’s are spiced lentil crepes served hot in breakfast or as a main dish during a meal. The first time I had these was on the streets of Calcutta, opposite Shibuji is a joint, which is filled with the yummy Calcutta street junk food. The extra spicy garlic chutney smeared on it and chopped green chillies and roasted onions adds the irresistible taste to the chilla. Its been over 6 years since I have had this street food in Calcutta, that it makes me want to go there grab a bite of all the stuff @ shibuji and top it with “soda shikanji” an all time favorite quencher again from Calcutta.

Its been one of my favorite sandwiches since I was a young girl. One of our neighbors in Coimbatore, India was a fantastic at making dishes with a snacky spicy touch and of all of them this one stayed on in my mind. This sandwich makes a healthy and filling breakfast. It also makes tasty and fun school snack/lunch box. This recipe uses grilling in a sandwich maker which makes it less messy and easy to carry in a lunch box as well. You can grill in an oven, a Panini or a stove top grill.
