The most delicious feather cake, with simple to buy ingredients and whisked and baked in a jiffy. My son suddenly started having a craving for "CUP" cakes and knowing that his craving does not go beyond a bite, decided to experiment and ended up making one delicious cup cake whose texture was as close to a feather. Serve it with some strawberries and whipped cream or any way you like it.

Chocolate Feather CAke

Makes: 25 cup cakes/ one 9" Spring Foam Cake Pan

Ingredients

  • 1/2 cup melted butter
  • 1 cup caster sugar
  • 2 teaspoon vanilla extract
  • 3 eggs
  • 2 cups all purpose flour
  • 1/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1/2 cup milk

Method

Preheat the oven to 180 C.

Whisk the butter, sugar, vanilla essence, baking powder,milk and eggs together until light and fluffy.

Add the flour and cocoa powder gradually to the above mixture and continue to whisk until until really fluffy and stiff peaks form.

Grease the spring foam pan/cake tin or into lined cake cups. Pour the mixture into a cake tin/ cups. If baking in the tin - bake for about 40 minutes or until the cake is cooked when tested with a skewer.

If baking in cake cups, then bake for about 15 minutes or or until the cake is cooked when tested with a skewer.

Note: Baking times differ from oven to oven, so if you are a first time baker, keep a watch on the cake so it does not get over baked, but testing in with the skewer at a earlier time.
