With not so easy ingredients to find in India like cream cheese and sour cream, I made the cheese cake with again a not so easy ingredient to find "Mascarpone". A very simple to make recipe and with absolutely nothing to worry about. The result is a delicious cheese cake.

Chocolate Cheese Cake

Serves: 12

Ingredients

  • 250 grams store bought chocolate biscuits or marie biscuits
  • 100 grams melted butter
  • 450 grams fine dark chocolate, chopped
  • 500 grams mascarpone cheese (softened cream cheese - alternatively)
  • 3/4 cup caster sugar
  • 4 eggs
  • 1.5 cups heavy cream (sour cream - alternatively)
  • 2 teaspoons vanilla extract
  • fresh berries, to serve

Method

Preheat the oven to 180 C.

Place the biscuits in the food processor and process until fine.

Add the melted butter and proces until well blended. Press the biscuit mixture into the bottom of a 8 1/2 inch spring foam pan or a cake tin which has been lined with non stick baking paper. Bake for about 8 minutes in the oven. Remove and allow it to cool.

Place the chocolate and butter and cream in a sauce pan over low heat and stir until melted.

In a large bowl whisk the mascarpone, sugar and vanilla extract and beat until fluffy. Add the eggs gradually and beat well.

Add the melted chocolate mixture and beat well. Pour the mixture into the cake pan/tin.

Wrap the outside of the pan/tin with foil. This is so that mixture does not ooze out of the spring foam pan. Bake for about 45 minutes. Remove from oven and allow it to cool.

Loosely cover and refrigerate for atleast 12 hours.

To Serve, cut into slices and top with strawberries or raspberries.
