This delicious cake, is moist fluffy and has the wholesome flavor of apples and cinnamon is made from rice flour.
This was an accidental discovery, when an illusions of flour happened as I opened the freezer to pick the all purpose flour, but picked rice instead. The result was delicious.

Note this recipe is low on its sugar. If you need that added sugar, sprinkle with powdered sugar on top, it tastes delicious.

Apple Cake from Rice Flour

Baking Time: 40-45 minutes till the tester comes out clean

Ingredients

  • 1.5 cups rice flour or all purpose flour
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 cup fresh cream
  • 1/2 cup butter milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 teaspoons rum or brandy (optional)
  • 1 cup chopped apples
  • 1/2 cup of walnuts or pecans

Method
Preheat the oven to 200 C. Grease and flour an 8 inch square pan or a 9 inch circular spring foam pan. Or line the pan with parchment paper.

Whisk all the ingredients except the apples and walnuts in the bowl very well, until light and flully. Add the apples and walnuts and beat for a few more minutes.

Scrape the batter into the greased panĀ  and spread out evenly. Bake until the tester like toothpick or a knife comes out clean, for about 40-45 minutes.

Allow the cake to cook completely.

Serve warm with a hot cuppa!

Ohh, I'll bet that cream takes it to a different level. I once used a banana bread recipe that called for heavy cream -- the result was beyond any banana bread I had ever eaten. It was so moist and banana-like inside. It melted in your mouth. I make a wicked-awesome apple cake based on my dad's recipe. It uses the most minimal amount of ingredients and, like the banana bread, tastes better than any apple cake I've ever eaten in my life, hands down. Cream rocks. Add cream to your dal, I dare you. :)
