A sweet and moist cake made from oatmeal and brown sugar, makes a healthy snack for the kids or even a afternoon cuppa. Make it a day or two before serving and it get moisture and tastier. Make sure you have all the ingredients except water at room temperature, about 70F.


Baking Time: 35 minutes approximately Ingredients
- 1 cup old fashioned rolled oats
- 1.5 cups boiling water
- 1 1/3 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla essence
Method Preheat the oven to 180 C. Grease and dust a 9 inch spring foam pan. Combine the oats and water and let it stand for 20 minutes. Meanwhile whisk together, the flour, baking soda, cinnamon, nutmeg, salt. In another medium size bowl, beat on high speed, sugar, butter, eggs and vanilla until light and fluffy. Slowly add the oat mixture to the butter mixture, beating slowly, then gradually add the flour mixture until everything is mixed well. Scrape the batter into the prepared pan and spread evenly. Bake in the oven for about 30 minutes or until the tester when inserted comes out clean. Allow it to cool and serve warm. Or cold with some vanilla custard.
