Bars packed with spice, almonds and molasses, make them special and adds a festive flavor. Add in some dried fruits like cherries, raisins, and some chocolate would add a Christmas flavor to these delicious bars.
Makes: about 50 bars
Ingredients
- 1.5 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon powder
- 3 large eggs
- 1/2 cup brown sugar
- 1/4 cup molasses or honey
- 1/2 cup of dried cherries or raisins
- 1/2 cup of blanched chopped almonds
- 1/2 cup of chopped unsweetened chocolate
Method
Preheat the oven to 180 C. Grease a 13 x 9 inch baking pan with foil.
Whisk together the dry ingredients like flour, baking powder, salt and cinnamon.
In another bowl, whisk the eggs and brown sugar. Add in the molasses/honey and flour gradually and slowly blend them together. Stir in the raisins, almonds and chopped chocolate.
Spread the batter into the baking pan, evenly. Bake for about 20 minutes or until set. Remove from oven and allow it to stand for 15 minutes to cool.
Cut the bars into 2 x1 inch bars. They make about 50 of them.
