Ingredients

  • 500 ml Vegetable stock
  • 180 ml Milk , evaporated
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 clove Garlic , grated
  • 1 Onion , diced
  • 1 Carrot (Gajjar) , peeled and diced
  • 1 Celery , the rib of celery, cleaned and diced
  • 1/2 teaspoon Fresh Thyme leaves , minced
  • 200 grams Great Northern Beans , not drained (or 1 can)
  • 1 cup Archana's Kitchen Millet Noodles , cooked
  • 1/2 cup Green peas (Matar) , steamed
  • 1 pinch Sage , minced
  • Salt and Pepper , to taste

How to make Heart Healthy White Bean And Noodle Soup Recipe

  1. To begin making the Heart Healthy White Bean And Noodles Soup, in a saucepan heat up vegetable broth steamy for about 5 minutes on medium flame and turn of the heat.

  2. Add evaporated milk into the vegetable broth and stir well. Keep aside.

  3. Heat the oil in a large soup pot. Add the grated garlic, onion, carrot, celery and cook until softened. This might take 7 to 8 minutes.

  4. Add the fresh thyme, prepared hot vegetable broth, beans and bring to boil.

  5. Cover with a lid, reduce the heat and simmer.

  6. Let the beans cook well and all other flavors blend in. This should take 15 to 20 minutes.

  7. Add the noodles and continue to simmer until tender or for about 10 minutes.

  8. Stir in green peas and minced sage with required salt and pepper. Let it simmer until everything is combined. Once done, serve hot.
