Keri nu Panho

Serves: 4 to 6
Cooking Time: 15 - 20 minutes
Preparation Time: 10 minutes

Ingredients
  • 2 raw mangoes
  • 3/4 cup jaggery (or sugar)
  • 1/2 teaspoon freshly powdered cardamom powder
  • a few strands of saffron

Method
Boiling the raw whole mangoes in water, until soft and tender. You will notice that the skin gets tender

Drain the water. Allow the mangoes to cool, then remove the skin from the mangoes.

Squeeze the pulp out right out the seed as well.

Add jaggery, cardamom powder and saffron. Blend this mixture into a puree and store this concentrate in the refrigerator.

When you wish to serve, two tablespoons of water and 1.5 cups of water per tall glass. Stir well. Add ice cubes and serve.

You can change the concentration of the drink by adding more of the mango concentrate.

Alternatively: You can add cumin powder and black salt instead of cardamom and saffron. This will be a sweet, tangy and spicy taste.

Alternatively: You can add crushed ginger juice and mint.
