A creamy yogurt delicacy of Gujarat made from fresh low fat yogurt. The very famous way to savor this dish is with Puris (Puffed Indian Fried Bread). Indian sweets in general are savored along with a main course Indian meal and so is Shrikhand.

But serve it has a dessert; with addition of fruits with pomegranate, green grapes, mangoes; it is a sure teaser to your senses.

Serves: 4 servings
Preparation Time : 5 minutes
Cooking Time: nil

Ingredients
  • 4 cups of yogurt (use low fat preferably)
  • 1 cup of powdered sugar
  • 2 teaspoons cardamom powder
  • a few saffron strands
  • 2 tablespoons warm low fat milk
  • 1/4 cup chopped pistachio or almonds


Method
Hang the yogurt in a cool place, in a muslin cloth, for approximately 3 hours, until all the whey in the yogurt has drained.

Rub the saffron in warm milk gently until the color and flavor of the saffron get shown in the milk.

Whisk together the hung yogurt, sugar, saffron, cardamom powder until fluffly. Add in the pistachio and gently mix it in.

Place in the refrigerator for at least 2 hours before serving. Serve cold.

Arch, I added a little sour cream to my yogurt ...it tasted yummmm. thanx for the recipe.
