Steamed broccoli's pureed with some low fat milk, with some freshly ground black pepepr is delicious and nutritious.Broccoli is a fiber rich food. Not only is it rich source, but half of its fiber is insoluble and half is soluble, helping to meet your needs for both types of fiber. Broccoli's noteworthy nutrients include Vitamin C, Vitamin A, folic Acid, calcium and fiber.

Serves: 4 persons Cooking time: 20 minutes Preparation Time: 15 minutes
Ingredients
- 3 cups of broccoli florets with stems
- 1 tablespoon butter
- ¼ cup chopped onion
- 2 cups fat-free milk/low fat milk
- 2 cups water or vegetable broth
- Freshly ground black pepper
- Salt to taste
Method
Heat oil in large saucepan on medium; onion until tender
Add broccoli and 1/4 cup of water; simmer until tender and cooked.
Allow it to cool. Add milk, water/broth, salt and broccoli and puree in a blender until smooth.
Transfer to a sauce pan and bring to a boil and simmer for few minutes. Add pepper to taste
Serve warm with a crispy warm bread
