A deliciously tasting snack, much savored on a rainy day in India. Popular all over India and known by different names. In the south, it's called a Bonda, and north a Vada, so much for this potato which is coated with a gram flour batter and deep fried and savored with Chutneys like Green Chutney and Date and Tamarind Chutney or just plain old Tomato Ketchup. You could serve this as is, or sandwiched into a bun for lunch or into a Vada Pav.What ever way you decide to have it, it's sure to tease your pallates.

A very popular dish all over India and each region in India as its own recipe for making these Vada’s. In the Southern India coconut is added to the yogurt mixture along with some green chillies and seasoned with mustard seeds and curry leaves. In the North, it’s a very popular street food, garnished with Date and Green Chutney

Chilla's are spiced lentil crepes served hot in breakfast or as a main dish during a meal. The first time I had these was on the streets of Calcutta, opposite Shibuji is a joint, which is filled with the yummy Calcutta street junk food. The extra spicy garlic chutney smeared on it and chopped green chillies and roasted onions adds the irresistible taste to the chilla.

Spiced up potatoes and vegetables, simmered in butter and some spices, served with pav buns has been a favorite road side food for many many decades. Go to any street fast food, pav bhaji is sure to stand out as a main item in the chaat menu. The chaal meal has to be finished with a pav bhaji for an untimate satisfaction to the tummy.

Little crisp round spiced Indian crackers, layered with potatoes, chutneys, chaat masala, yogurt and sev is another favorite chaat. So much to the indian street food, the little fried crackers are a common snack among many indian households. With chutneys stocked away in the freezer, many whip up simple chaats like this for a quick tea time snack.

Mashed potatoes, spiced with green chillies, turmeric and onions, pan fried with oil make a delicious tea time snack. This version is called differently in different parts of india, cutlets in the south, tikkies in the north, patties in gujarat.
This can be made healthier with additons of grated carrots, cheese, panner. Tastier with green spring onions, corn, peas or any thing you can think of. Sandwitch it between a burger bread/ normal slice bead and pack it off as a snack/lunch box.
