A favorite summer fruit which is on everyone's list of favorites is Mangoes. Raw Mangoes are green and very sour and can be transformed into this flavorful cool drink.  Popularly called as Keri nu Panho or simply Pano in Gujarat, is a refreshing summer drink made from raw mangoes sweetened with jaggery and flavored with cardamon and saffron. There are multiple ways of preparation of this favorite drink and each household has a favorite recipe. I have a few alternatives listed here and you can go ahead and experiment to suite your taste.

The addition of jaggery gives instant energy and strength to one who has worked in intense summer heat or one who has come from a summer expedition. The richness of iron in jaggery help renew the energy in oneself.

Keri nu Panho

 


Makes : 6 cups
Cooking Time: 15 - 20 minutes
Preparation Time: 10 minutes

Ingredients List

  • 1 cup raw mangoes chopped with skin
  • 1/2 cup sugar
  • 1/2 teaspoon freshly powdered cardamom powder
  • 1 teaspoon black salt
  • 8 cups of water

Alternative Ingredients List

  • 1 cup raw mangoes chopped with skin
  • 1/2 cup jaggery
  • 1/2 teaspoon freshly powdered cardamom powder
  • a few strands of saffron
  • 8 cups of water
Other Taste Enhancers
  • chopped mint leaves
  • ginger juice
  • black pepper
  • roasted cumin
  • dash of cinnamon
  • your imagination

 

Method


Boil the raw whole mangoes in 1 1/2 cups water, until soft and tender. You will notice that the skin gets tender and pale.

Drain the water. Allow the mango mixture to cool. Add all the other ingredients and puree the mixture in the blender adding all the water.

 

Serve cold. You can enhance the flavor according to your taste with the addition of any of the Taste Enhancers.

Note: Adjust the sugar, water and salt levels according to your taste.
