The ever popular hutney served with many chaat dishes and even some fried snacks is made delicously healthy. The combination of dates and jaggery makes it an iron rich food. It can kept frozen up to 3 months.

Makes: 2 cups Cooking time: 30 minutes Preparation Time: 10 minutes
Ingredients
- 2 cups of deseeded dates
- ¼ cup deseeded tamarind
- 1 cup jaggery
- 1 teaspoon chilli powder
- Salt to taste
Method
Heat 4 cups of water in a sauce pan and add all the ingredients and simmer for 30 minutes.
Alternatively, you can place all the ingredients in the pressure cooker for 2 whistles and turn off heat. Allow the pressure to release itself and then proceed with intructions below.
Cool the mixture and puree into a smooth paste in a blender. Strain to remove any residue and use as required. Store Refrigerated or freeze for about 3 months.
