Raw Mango Chutney are a favourite accompaniment to most Indian meals. Each regions of India has a specific way of making it. But I like it just the way my mother always makes it. Super delicious. They can be had alongside with vegetables and breads like Paratha, Bajra Na Rotla, Thepla or even along with a spicy tamarind rice or as a spread ove toasted bread.

Makes: 1½ cups approximately
Ingredients
1 cup raw mango peeled and roughly chopped
¾ cup sugar
1 teaspoon of finely chopped ginger
¼ teaspoon red chilli powder or gree chillies
¼ teaspoon turmeric powder
½ teaspoon crushed cumin seeds
1 table juice lemon juice
Salt to taste
Method
Heat ½ cup of water in a pan on medium heat; stir in the mangoes and cover the pan allowing it to cook until soft and tender. Stir in the sugar, ginger, cumin, turmeric powder, red chilli powder and salt to the mango mixture. Continue stirring until the sugar is dissolved completely. Turn the heat to low and boil the mango mixture for another 10 minutes.
Finally add lemon juice and simmer for a couple of more minutes. Turn off heat and allow it to cool completely and refrigerate until you are ready to serve.
