A whole some dish rich in proteins and minerals, is made from split red lentils and spinach. The addition of lemon and ginger and the simplicity of the dish makes it delicious and healthy.

Dal Palak

Serves: 4

Ingredients
  • 3/4 cup Masoor dal (split red lentil)
  • 1 cup of chopped spinach
  • 1/2 cup of chopped tomatoes
  • 1 teaspoon of grated ginger
  • 1/2 inch cinnamon stick or 1/4 teaspoon cinnamon powder
  • 1/2 teaspoon of cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1-2 whole red chillies
  • 1 tablespoon oil
  • Salt to taste
Method
Cook the dal in 3 cups of water until tender, soft and mushy. You can use a pressure cooker or a pot to cook the dal.

Heat oil a pan; add the cumin seeds, whole red chillies, cinnamon stick and ginger. Allow it to crackle. Add the tomatoes, turmeric powder, chopped spinach and cook in medium heat covered, stirring occasionally until the spinach has become tender, cooked and reduced in quantity.

Add the cooked dal to the above spinach mixture and bring it to boil. Simmer for a 3-4 minutes. Turn of heat and your dish is ready.

Serve hot with plain steamed rice, or hot phulka's or parathas.
