Spinach rice a simple, healthy preparation of cooked rice, mixed and spiced up with sauteed spinach and some pices. It is accompanied with with tomato-onion raita makes a delicious and nutricious meal. The addition of sambar powder and garam masala, combination which you will not find anywhere but in this recipes, is sure to open that spice palate in you. A great lunch box meal filled with nutrition of spinach and rice.
1-1/2 cups cooked rice
1 cup packed, chopped spinach
1 teaspoon cumin seeds
1 teaspoon grated ginger
1/2 cup pureed tomatoes
1/2 teaspoon turmeric powder
1 teaspoon homemade sambar powder or store bought
1 teaspoon garam masala powder
2 tablespoons ghee or sesame oil
salt to taste
Heat oil in a heavy bottom pan on medium heat; add then cumin seeds, grated ginger and sauté for a few seconds.
Stir in the tomatoes and turmeric powder and saute for a few seocnds. Stir in the chopped spinach and salt. Cover the pan and allow the spinach to cook until soft. When you open the pan you will notice that the spinach has released a lot of water. Turn the heat to high and allow the water to evaporate. Stir in the cooked rice and sambar powder and combine well.
Turn the heat to low, cover the pan and simmer for a few minutes. After a few minutes you will notice that the rice is full of aromas. Serve warm along with tomato onion raita or plain yogurt.
