Cottage cheese(Paneer) simmered in cooked and pureed spinach is delicately spiced with cinnamon and cumin is a delicacy at my home. Along with the richness of protien in the paneer and vitamins and minerals in the spinach, it makes it a wholesome, healthy and low fat dish. We love to savor this dish along with hot phulka's smeared with ghee and some Jeera pulav.

Makes: 4 to 5 servings
Ingredients

  • 1 1/2 cups fresh made paneer cubes/ 200 grams packet of paneer
  • 2 cups blanched then pureed spinach
  • 1 teaspoon finely grated ginger
  • 1/4 cup tomato puree
  • 1 inch long cinnamon stick
  • 1 bay leaf
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 2 tablespoons of fresh cream
  • 1 teaspoon Vegetable/Sunflower oil
  • Salt to taste

Method

Soak the paneer in hot salt water for about 30 minutes, if it is a store bought paneer. This process makes the paneer soft and tasty.

Heat oil in a frying pan on medium heat; add cumin seeds, chopped ginger, cinnamon stick, bay leaf and allow them to crackle for a few seconds. Stir in the tomato puree and saute for a few more minutes. Finally stir in the cumin powder, turmeric powder, garam masala, red chilli, salt, pureed spinach and paneer cubes and simmer for 3 to 4 minutes. Add the fresh cream and simmer for a few more minutes and serve warm.
