Cottage cheese(Paneer) simmered in spiced cooked spinach gently spiced with cinnamon and cumin is a delicacy among my children and family. Along with the richness of protien in the paneer and iron in the spinach, it makes it a wholesome, healthy and low fat dish.
Serve it with warm Jeera Pulav, naan or plain simple phulka's.

Palak Paneer

Serves: 4 persons
Cooking time
: about 15 minutes
Preparation Time: 20 minutes

Ingredients

  • 1 cup fresh made paneer cubes/ 200 grams packet of paneer
  • 2 cups blanched then pureed spinach
  • 1 teaspoon finely grated ginger
  • 1/4 cup tomato puree
  • 1 inch long cinnamon stick
  • 1 bay leaf
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 3 tablespoons of fresh cream
  • 1 teaspoon Vegetable/Sunflower oil
  • Salt to taste

Method

Soak the paneer in hot salt water for about 30 minutes, if it is a store bought paneer. This process makes the paneer soft and tasty.

Heat oil in a frying pan, add cumin seeds, chopped ginger, cinnamon stick, bay leaf and allow them to crackle. Add the tomato puree and saute for a few more minutes.

Add cumin powder, turmeric powder, garam masala, red chilli, salt, pureed spinach and paneer cubes and simmer for 5 minutes.

Add the cream and simmer for a few more minutes and serve hot..
