10 Comments »Ever wondered how you can get the tandoor or the barbequed flavor at home without have a tandoor or coal grill? Here is a perfect and easy method which makes your food taste delicious. You will get the feel and aroma that the food has just come out of the coal grill or a tandoor.

Burning Coal till it gets red and grey

The coal smokes when we add ghee. Cover the pan now
All you need is a 3 inch piece of coal
Method
Take a piece of coal (about 3 inches big) on the gas flame.
The coal is hot when it begins to turn red and also grey.
At this point heat a frying pan to medium heat and add the vegetable or any other food mixture and toss for a few minutes. Make a well in the centre of the pan, place a glass/ steel cup in the centre and place the hot coal inside the cup. Add a spoon of ghee on the coal. It will begin to smoke. Immediately cover the pan and reduce the heat to low and let it sit for about 5 minutes.
Open the lid and you will notice the smoke is gone and the food has got that tandoori/ barbequed/ smoked flavor. The taste is simply delicious.
An example of a few dishes where you can use this smoking method:
- Panner Tikka Masala
- Paneer Tikka’s
- Khadai Paneer
- Smoked Baby Corn Brucheta
- Smoked steamed corn
- The list can go on as you can keep innovating dishes you like to have smoked flavor.
