Refined flour is mixed with eggs and salt and olive oil to make a firm dough and the ravioli are prepared by cutting out thin roundels with the help of cookie cutter.   • 2-1/2 cups All Purpose Flour (Maida) , (1/2 cup for dusting)
  • 3 Whole Eggs
  • Salt , to taste
  • 1 tablespoon Extra Virgin Olive Oil
  • Ingredients For Filling
  • 1 Broccoli , medium, finely chopped
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Garlic , finely chopped
  • Salt , to taste
  • 1 cup Mozzarella cheese , grated
  • 1 teaspoon Red Chilli flakes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried Thyme Leaves
  • 1 tablespoon Whole Black Peppercorns , crushed
  • Salt , to taste
  • Ingredients For Sauce
  • 3 Tomatoes , pureed
  • 1 tablespoon Butter (Salted)
  • 1-1/2 tablespoon All Purpose Flour (Maida)
  • 2 cups Milk
  • Salt , to taste
  • 1/2 teaspoon Whole Black Peppercorns , crushed
  • 1 tablespoon Garlic , finely chopped
  • 1 cup Spinach , finely chopped(you can add 1/2 more cup if you like spinach)
  • 1 cup Del Monte Whole Corn Kernels , canned
  • 1 teaspoon Red Chilli flakes
  • 1 teaspoon Dried Thyme Leaves
  • 1 teaspoon Dried oregano
  • 6 Basil leaves

How to make Ravioli Recipe With Broccoli Filling In White And Red Sauce

  1. To prepare Ravioli Recipe with Broccoli Filling, get prep with all the ingredients necessary. Beat eggs in a bowl well.

  2. In another bowl, take all-purpose flour, add salt and olive oil.

  3. Reserve some beaten egg in a small bowl and add the remaining beaten egg in portions to the mixing bowl containing flour, salt, and oil.

  4. Slowly knead into a stiff dough and keep it aside.

  5. To make the filling, heat oil in a non-stick pan and add garlic and sauté them till golden.

  6. Add broccoli and sauté them for a few minutes.

  7. Add Italian seasoning and crushed black peppercorns.

  8. Transfer the filling to a bowl and add mozzarella cheese and mix it well. Keep aside

  9. To make the sauce, heat in a non-stick pan.

  10. Add garlic and sauté them till golden brown.

  11. Add tomato puree and cook for 3-4 minutes.

  12. Add spinach and corn, mix well and cook for 2-3 minutes.

  13. Add Italian seasoning and crushed peppercorn and torn basil leaves.

  14. Mix well and cook for another minute. Remove from heat and set side.

  15. Heat butter in another pan and add refined flour and sauté them till light brown.

  16. Add milk and mix well, keep mixing so that there is no lump in the mixture. Cook till thick to make a white sauce.

  17. Boil some water in a deep pan.

  18. To make the ravioli, dust some flour on the countertop.

  19. Place the dough on it and roll it out on a thin sheet. Cut into round shapes with cookie cutter or a similar tool.

  20. Place some prepared broccoli filling on the top of roundels and brush the side with reserved beaten eggs and cover it with other roundels, press its sides and seal it with a fork making a pattern on them.

  21. Make all the ravioli like this.

  22. Meanwhile, when the water is boiling, add olive oil and salt.

  23. Add prepared ravioli one by one and blanch it till done.

  24. Mix red and white sauces well and heat it in a deep pan.

  25. Add blanched ravioli in it and coat each of them well.
