  • 1 cup All Purpose Flour (Maida) , (or 1/2 cup Maida and 1/2 cup whole wheat flour
  • 1-1/2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 3 Ripe Bananas , small, about 1/2 cup when mashed
  • 12 Dates , deseeded, soaked in warm water for 10-15 minutes
  • 1/4 cup Caster Sugar
  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 cup Milk
  • 3 tablespoons Curd (Dahi / Yogurt)
  • 1 teaspoon Vanilla Extract

How to make Eggless Banana and Date Loaf Recipe

  1. To begin making the Banana and Date Loaf Recipe, first set your oven to preheat at 180° C and prepare your loaf pan by buttering and flouring it well.

  2. In a medium-sized mixing bowl, sift together the flour, baking powder and baking soda

  3. In a small blender jar, puree the bananas, sugar and dates together

  4. Transfer the puree banana and dates into a large mixing bowl. Add the oil, milk, yogurt and vanilla extract and whisk until just mixed to a smooth and creamy consistency. You can also use a hand blender to ease the process of mixing or use a spatula.

  5. Add the flour mixture in batches, gently folding the batter with a spatula, till all the flour is incorporated into the cake batter and no streaks of flour remain.

  6. Pour the Banana date cake batter into prepared loaf pan and bake for 30-40 minutes or until the cake is golden brown, well risen and a toothpick inserted in the centre comes out clean.
