How To Make Soft Idlis

Idli's are delicious south indian rice and lentil steamed cakes. They are typically had for breakfast or even dinner. Idli's are packed with nutrition that is easy to make but also extremely healthy and easy to digest. It is also a common mans street food in southern india. Every high way, every street corner will have an idli shop and yes it is one of the foods that is safe to eat anywhere as one cant go wrong in making it.


Idli batter

You will also need a steamer with idli plate rack.


Once the batter is well fermented, very slowly fold the batter to combine. By mixing slowly you will retain the fluffiness of the batter that will help the idli's remain soft and fluffy even after steaming.

Prepare the steamer with a little water in the bottom. 

Grease the idli molds with a little oil and pour spoonfuls of the batter into these moulds. Place inside the steamer and steam for 10 to 12 minutes.

Once steamed, remove from the steamer and allow it to rest for 2 to 3 minutes before you can remove the idli's.


Tip: For removing the idli's fill a small bowl filled with water. Dip a spoon in the water and then scoup the idli's out starting from the edges. Dipping the spoon in water helps in the easy removal of idli's from the plates.

Serve the idli's hot with vengayam sambar and coconut chutney
