The Kadai Vegetable Sabzi Recipe is a quick and easy sabzi to make that has the goodness of a variety of vegetables adding colour, taste and nutrition to your weeknight dinner. This recipe I have steamed the vegetables a little but before tossing them on the kadai to make the sabzi. By doing this, we preserve nutrition and also helps in the faster cooking process.

The Gobi Musallam Recipe is a delicious and simple preparation of the cauliflower vegetable. I had tasted this recipe in one of the North Indian restaurants while I was living in the US and it immediately attracted my palate. In the traditional method of making this dish, the entire cauliflower is boiled in pot/ roasted and cooked, but I prefer making florets of the cauliflower as it is quicker to cook and also easier to eat as well. I simply love this recipe, as it is bursting with flavours and textures and the addition of cream makes the musallam super delicious.

Thai Pineapple Vegetarian Curry Recipe

The Thai Pineapple Vegetarian Curry Recipe is super simple dish to make and is a favorite at home. The sweetness and the sourness from the pineaple along with the vegetables simmered in an aromatic thai flavoured broth tastes delicious. I have used a red churry paste to make this dish, but you can also use a yellow curry paste or even a green curry paste. Essentially you want to have the curry that is bursting with flavors from lemon grass.

Baingan Masala Recipe

The Baingan Masala Recipe is a dish that is packed with flavors from rich vibrant tomatoes, a hint of garlic, garam masala and not to miss the coriander powder and leaves that give it that rich gravy consistency and taste. The baingan (eggplant) is first roasted seperately and then combined along with the tomato masala giving it the special touch. At home I serve the Baingan Masala along with Phulka's and a Carrot Salad - a favorite dinner combination at home.

The Tawa Handvo is a nutritious protein packed meal is one of the most popular Gujarati one-dish meals. Traditionally the handvo is cooked in an earthen pot over low flame but due to conveniences in modern cooking techniques, families use ovens to bake them or use a skillet to pan cook them. I personally prefer the tawa (skillet) method, as it feels lighter to eat and has crispy edges giving it the additional taste to the palate.

Many families like mine love to add the juices from Gor Keri pickle into the batter to give a sweet and spicy taste and flavor to the finished dish. Serve Tawa Handvo lentil skillet pancakes along with Gor Keri pickle or with Gor (jaggery) and homemade butter for breakfast or a weeknight dinner.

Fresh Tomato Basil Pasta with Spinach

The Fresh Tomato Basil Pasta with Spinach Recipe is one of the classic Italian Vegetarian Dishes that Italians make at home for a quick weeknight dinner. In one of my trips to Italy, the one thing that stood out was the abundant use of vegetables in Pasta's and other dishes. And the other thing that stood out even more was the freshness of the pasta sauce. There is something special about their tomatoes, that gives a vibrant colour and a subtle sweetness.

In this Tomato Basil Pasta with Spinach Recipe I have tried to bring back those flavors I loved eating there. I hope you enjoy it too.
