This pasta recipe is simple to make that is bursting with flavors from the tomatoes, basil, garlic and olive oil. It has a short cooking time and when you have a pomodoro sauce ready, your weeknight dinner for family would be ready in minutes.

The Patta Gobhi ki Sabji Recipe is a super quick and easy recipe that I make often at home. The vegetable, is light and yet has all the flavours of the masalas and the cabbage, making it a healthy recipe as well. At home, I most often make it for lunches and serve it along with Thepla and Gujarati Dal or even Tomato Rasam.

Baingan Masala Recipe

The Baingan Masala Recipe is a dish that is packed with flavors from rich vibrant tomatoes, a hint of garlic, garam masala and not to miss the coriander powder and leaves that give it that rich gravy consistency and taste. The baingan (eggplant) is first roasted seperately and then combined along with the tomato masala giving it the special touch. At home I serve the Baingan Masala along with Phulka's and a Carrot Salad - a favorite dinner combination at home.

The Tawa Handvo is a nutritious protein packed meal is one of the most popular Gujarati one-dish meals. Traditionally the handvo is cooked in an earthen pot over low flame but due to conveniences in modern cooking techniques, families use ovens to bake them or use a skillet to pan cook them. I personally prefer the tawa (skillet) method, as it feels lighter to eat and has crispy edges giving it the additional taste to the palate.

Many families like mine love to add the juices from Gor Keri pickle into the batter to give a sweet and spicy taste and flavor to the finished dish. Serve Tawa Handvo lentil skillet pancakes along with Gor Keri pickle or with Gor (jaggery) and homemade butter for breakfast or a weeknight dinner.

Different regions of south india make a Kuzhambu with a set of spices that a family uses and many also add coconut milk to make the Kuzhambu richer.

Serve the Murungakkai Puli Kuzhambu Recipe for a quick weeknight dinner along with steamed rice and ghee or even along with dosa's and idli's

Fresh Tomato Basil Pasta with Spinach

The Fresh Tomato Basil Pasta with Spinach Recipe is one of the classic Italian Vegetarian Dishes that Italians make at home for a quick weeknight dinner. In one of my trips to Italy, the one thing that stood out was the abundant use of vegetables in Pasta's and other dishes. And the other thing that stood out even more was the freshness of the pasta sauce. There is something special about their tomatoes, that gives a vibrant colour and a subtle sweetness.

In this Tomato Basil Pasta with Spinach Recipe I have tried to bring back those flavors I loved eating there. I hope you enjoy it too.

Qorma Baamia

Baamia is nothing but our bhindi/okra in Afghan. 'Qorma Baamia' - Baby Okra cooked in rich tomato-onion puree! Had this gravy a few weeks back at Afghani Restaurant and it was finger-licking good. I love experimenting on this versatile vegetable - Okra (bhindi) every now n then! But so far, I never imagined myself cooking bhindi in gravy directly. I rried replicating the same in-house and BINGO! It was as good as the restaurant version of it.
