Kakka Orotti Recipe (Steamed Mini Rice Balls in Chicken Gravy)

Kakka Orotti Recipe (Steamed Mini Rice Balls in Chicken Gravy)

Thursday, 27 April 2017 00:21

This is Malabar dish that we call Kakka Orotti. It is a dish from my part of the world and one that's known by many other names like Aanapathal, pidi, aanaorotti, kunjipathal, undio, pinde, etc. The difference in name is largely depending on the region of origin in the southern state of India - mostly Kerala and coastal Karnataka. They are known differently and also are made differently except that all of it uses rice for the balls, are steam cooked and are folded into a prepared chicken or meat curry with coconut base. Kakka Orotti recipe I have shared is closest to our family recipe except that here I have used basmati rice to prepare the dough. Traditionally, it is done with Pachari or pacharsi or raw rice. The numerous tasks involved in making Kakka Orotti will seem overwhelming, but trust me it is not as complicated as it looks or sounds. All you need is a to plan according to your schedule to serve this delicacy. Serve Kakka Orotti on its own or along with Chickpea Sundal for your weekday meal. Gujarati Kadhi With Milk & Mint Recipe

Gujarati Kadhi With Milk & Mint Recipe

Saturday, 22 April 2017 00:19

Kadhi is very popular when it comes to Gujarati cuisine. Considered to be light and refreshing, it is a permanent fixture on the menu during festive meals, special occasions and celebrations. If I had to describe this Kadhi in one sentence it would be 'Gujarati kadhi, malai maarke’. It is rich in flavour and offers a different experience altogether.  Just the addition of two ingredients that are otherwise never added makes it simple yet indulging dish. What makes it stand apart is the addition of clotted cream (malai) and milk to make the Kadhi rich, creamy and mellow in taste. This method of making Kadhi has been adopted by the family and the practice of adding milk and malai continues even today in the times when refrigerators are machines without which we can not imagine our being. The flavours of malai and milk do not become very pronounced or loud but it lends the kadhi a subtle richness and mellow taste.  Another inclusion is of mint leaves which is otherwise never added to the Kadhi. This was how my elderly’s cook made the Kadhi for us. Do give this version of Gujarati kadhi a try, it is rich, mellow and refreshing! Serve Gujarati Kadhi With Milk & Mint along with Gujarati Undhiyu and Methi Thepla for a weekday lunch or dinner. Enchorer Torkari Recipe (Bengali Style Jackfruit Curry)

Enchorer Torkari Recipe (Bengali Style Jackfruit Curry)

Friday, 21 April 2017 00:11

In Bengali the young jackfruit is called 'Enchor'. It has a subtle flavour and meat-like texture, because of that Bengalis call it 'Gach PaNtha' (fake or faux meat). Curries, chops, koftas are prepared from unripe jackfruit.  Peeling and cutting this huge vegetable is a time consuming task. Moreover the sticky sap of jackfruit makes it more tedious and difficult. During my stay in the US we used to get canned young jackfruit, those are peeled and cubed, so no trouble on that part. Though the brine solution to preserve the vegetable makes it taste a bit sour. And of course a fresh vegetable will taste much better than a canned one.  I have used both canned and fresh young jackfruit to make the curry depending whichever available, a typical Bengali Enchorer Torkari, following my mom-in-law's recipe. Serve Enchorer Torkari along with Bengali Style Lau Die Tetor Dal and Bengali Luchi for a weekday meal.
