Mushrooms stuffed with cottage cheese and grilled makes a perfect appetizer that is sure to be a hit at your next gathering. They are quick to prepare and even faster to grill. I typically make these at almost at every party, just because its so simple and one does not get tired of this simply delicious dish.

Ingredients
15 large (2 1/2-inch-diameter) white (button) mushrooms, stemmed 1/2 cup of freshly made cottage cheese or ricotta cheese
1 tablespoon of fresh home made pesto (green or sundried tomato) or store bought
1/4 cup freshly grated cheddar cheese
Salt and cayenne pepper to taste
Method
Preheat the oven to 200 C.
Stir the cottage cheese, pesto, salt and cayenne pepper.
Coat the baking sheet / tray with about 1 tablespoon olive oil. Spoon the above filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Sprinkle the cheese on the all the stuffed mushrooms and bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve hot or cold, it tastes delicious either ways.
