Tzatziki - A Greek Yogurt Dip

This Greek dip is made with yogurt/curd that is hung in a muslin cloth until it releases all its whey and has a think an creamy consistency. Flavored with garlic, parsley and chilli flakes, makes it a perfect accompaniment. Serve it as an appetizer, along with a meal, spread or just like that, its sure to make your meal linger on.

Tzatziki - Greek Yogurt Dip

 

Makes: 1.5 cups approximately

Ingredients

  • 2 cups of fresh yogurt/curd
  • 1 garlic clove finely chopped
  • 1 tablespoon of olive oil
  • 2 tablespoons of chopped parsley
  • 1 teaspoon of chilli flakes
  • 1/2 cup of grated cucumber or finely chopped
  • Salt to taste

Method
Place the fresh yogurt in a muslin cloth/cheese cloth, tie a knot and hang in an uninterrupted place for about 4 hours, until all the whey has drained out.

Place the thick cream yogurt in a bowl, combilne the oil, parsely, garlic, chilli flakes, cucumber and salt. whisk well until fluffy.

Serve chilled.

You can optionally add chopped olives into them to add more flavor.

very nice site with very good recipes!
For making tzatziki, one can alternatively use plan Greek yogurt that is available in many stores these days and avoid the straining part to save time.
