An simple recipe for vegetarian Spanish rice, using fresh tomatoes, bell peppers,celery and green chilies. Although this Spanish rice recipe calls for bell peppers, you could also dice some carrots or add some peas or corn to the mix.
The smoked flavor adds a special taste to the rice which makes it so delicious. You can savor this rice as it is or with your Enchiladas, Tacos, Beans and Fajitas.

Preparation Time: 15 minutes + additional cooking time for rice.

Heat oil in a large pan, sauté the onions, green bell pepper,green chillies and celery until they are tender.
Add the tomatoes, salt, and pepper saute until the tomatoes have become soft like a puree.
Add the rice, water, salt , pepper and simmer on low flame until the rice is cooked and the water is evaporated. Turn off heat.
Now use the Coal smoking method, to heat coal, place the coal in a cup. Place the cup of coal in the center of the rice pot, pour some hot oil/ghee(clarified butter). The coal will start smoking. Close the Rice pot with the lid and allow the smoke to flavor the rice. Within a few minutes, remove the cup of coal (the smoke would have died down).
Stir in the cheese to the Spanish rice. Serve hot.
