Nothing can be as summery as a sauce made with fresh basil and freshly pureed tomatoes. The richness of spinach, the flavour of basil and some Parmezan Cheese, gets so well absorbed into the farfelle that makes it truely delicious and healthy.

Spinach Basil Farfelle Pasta

Serves: 4
Cooking Time: 30 minutes
Preparation Time: 15 minutes

Ingredients

  • 3.5 cups of uncooked farfelle pasta
  • 1 tablespoon of freshly chopped garlic
  • 1 cup of cooked and pureed spinach
  • 2 cups of freshly pureed tomatoes
  • 1/4 cup of cream
  • 1/4 cup freshly chopped basil
  • 1 tablespoon of olive oil
  • Chilli Flakes to taste
  • Parmezan Cheese Powder for sprinkling
  • Salt to taste

Method

Cook the pasta until al dente adding salt to the water in which the pasta is being cooked.

Heat oil in pan; add the garlic and saute until it turns slight golden. Add the tomato puree and basil and simmer until the tomato puree begins to boil.

Add the spinach puree, cream and salt and allow it to simmer until it begins to boil.

Add the pasta sauce to the cooked pasta and mix it well until all the pasta it coated with the sauce.

Cover it and allow it to sit for an hour before serving. You will notice that the sauce is more for the pasta, but after an hour the sauce is absorbed into the pasta and the flavors have seeped in as well.

Warm the pasta before serving and sprinkle some cheese and chilli flakes. Place a basil leaf for decoration on the serving plate.
