Farfelle, is a pasta which has never taken the backseat in my pantry has finally found its place in my children's tummy. A delicious dish, that is made with home made cottage cheese and home made tomato basil sauce, not to forget my all time favorite nutrient - Spinach. The flavors seep deep into the farfelle making it truly delicious.

Preparation Time
: 15 minutes
Cooking Time: 1 hour
Serves: 4-6 servings

Ingredients
  • 3 cups farfelle (small bow shaped pasta)
  • 2 tablespoons olive oil
  • 1 garlic clove finely chopped
  • 1.5 cups of freshly pureed tomatoes
  • Freshly ground black pepper
  • 2 teaspoons red pepper flakes
  • 6-8 fresh basil leaves, chopped
  • 1/2 cup of sharp cheddar cheese, grated
  • 1/2 cup of fresh cottage cheese
  • 1/2 cup of chopped spinach
  • Salt to taste

Method

Preheat oven to 200 C.

Bring a large pot of water to a boil. Generously add salt and 3 tablespoons of oil and add the Farfelle. Bring back to a boil and cook for 11 to 13 minutes until the Farfelle is just tender. Drain into a colander and rinse under cold water. Return the Farfelle to the pot and set aside.

Heat 2 tablespoons of the olive oil in a medium skillet over medium heat for 1 minute. Add the garlic and saute until tender and golden. Add the tomato puree, basil, spinach, salt and saute for about 5 minutes until the spinach becomes tender and not completely soft. Remove the mixture from the heat and set aside.

Add the cottage cheese to the above tomato sauce. Stir in gently.

Take a tart pan, place a layer of cottage cheese - tomato sauce at the bottom, then a layer of half of the farfelle, then a 1/2 of the cheddar cheese, remaining  sauce again, then the remaining farfelle and finally the remaining cheese.

Place it in the oven covered with aluminum foil in the preheated oven for 30 minutes or until the center of the pie is set. Remove the foil and allow it to bake open for 5 minutes.

Remove from the oven and let stand for 10 minutes. Run a spatula around the edges and underneath the pasta to loosen.

Slice the baked pasta into 6 to 8 pieces and serve hot.
