Tabouli is a Middle Eastern Arabic salad dish, often used as part of a mezze. Its primary ingredients are bulgur, finely chopped parsley, mint, tomato, scallion (spring onion), and other herbs with lemon juice, olive oil and various seasonings, generally including black pepper and sometimes cinnamon and allspice.

This recipe was shared by a Lebanese Cooking Club friend during my days in France. You cannot go wrong with this recipe. A juicy salad with the favors of parsley is simply delicious and delectable.I tried getting bulgur in the stores, but used couscous as an alternative. The picture shows couscous; the parsley was also used in much less quantity.
Serves:4 Preparations: 20 minutes
Ingredients
- ¼ cup crushed wheat (bulgur)
- 2 finely chopped white onions
- 1 cup finely chopped tomatoes
- 1 ½ cups finely chopped parsley
- ¼ cup finely chopped mint (optional)
- ½ teaspoon cinammon
- ¾ cup olive oil
- 1 cup of lemon juice
- Salt & pepper to taste
Method Bring 1 cup of hot water and salt to a boil. Pour over bulgur. Stir to make sure all grains are coated with water. Cover with lid and let stand for 10 minutes. Remove lid and fluff with a fork to separate grains. Add couscous to large bowl and gently stir onions, tomatoes, mint and parsley together. Add olive oil, lemon juice, cinnamon, salt and pepper to taste. Stir well. Cover and chill. Serve with some pitta bread and hummus. You can optionally add feta cheese crumbled and sprinkled on the top before serving.
