Chikpeas fresh cubed oranges and sundried tomatoes tossed in olive oil and flavoured with parsely is super delicious. An impeccable salad served chilled is great for a summer afternoon picnic or a dinner party. It is wholesome and rich in flavours and textures.
Ingredients 1 cup chick peas, boiled with salt or use the tinned variety 1 cup oranges diced (1/2 inch sizes) 1/4 cup chopped sun dried tomatoes 3 tablespoons chopped parsely 2 tablespoons olive oil 1 teaspoon paprika 1 tablespoon lemon juice salt to taste
Method Combine all the ingredients together, except the salt, lemon juice and paprika. Refrigerate for couple of hours and when ready to serve stir in the salt, lemon juice and paprika. Happy Eating!
