Green papaya salad, also known as "som tam", has a crispy texture and combines wonderfully with the spice of green chilies, sourness of the lemon juice and the sweetness of honey. Green papaya salad is a flavor-filled dish that will make a great starter for a party. It is easy to make, low in calories, and very nutritious.
Makes: 4 servings
1 small green papaya, skin pealed and grated long
1/4 cup roasted peanuts, coarsely crushed
1/4 cup bean sprouts (optional)
1/4 cup pomegranates
2 teaspoons of fresh coriander finely chopped
1 red chilli, sliced, seeds removed (optional)
1 green chili, sliced, seeds removed
1/2 teaspoon soy sauce
1 tablespoon sesame oil
2 tablespoons lemon juice
1 tablespoon honey, to taste
1/4 teaspoon chili flakes or cayenne pepper
In a small bowl combined all the dressing ingredients and keep aside.
Peel the green skin off the papaya, then slice it in half. Use a spoon to scrape out the seeds. Using the largest grater you have, grate the papaya, into ribbon-like strips. Place it in a large bowl.
Stir in the remaining salad ingredients. Drizzle thedressing over the salad mixture and toss well to combine.
Adjust the sweetness, lemon and chillies to suit your taste. Serve immediately!
Make Ahead Tip: If you wish to make this salad ahead of time, combine all ingredients except the nuts and the dressing. You can then leave it covered in the refrigerator several hours, or overnight. Add the dressing and peanuts at the last minute, then toss and serve.
