Broccoli Soup

A plain and simple Broccoli soup is so delicious with a dash of butter and with some freshly ground black pepper. Broccoli is a fiber rich food. Not only is it rich source of iron, but half of its fiber is insoluble and half is soluble, helping to meet your needs for both types of fiber. Broccoli's noteworthy nutrients include Vitamin C, Vitamin A, folic Acid, calcium and fiber.

Broccoli Soup

 

 

Makes: 4 servings

Ingredients

  • 4 cups of broccoli florets with stems
  • 1 teaspoon butter
  • 2 cups water or vegetable broth
  • Freshly ground black pepper
  • Salt to taste

Method

Steam the broccoli until tender in a steamer or a pressure cooker.  Allow it to cool.

Puree the broccoli along with 1 cup of water until smooth. Strain to remove any residue.

 

Transfer the broccoli to a sauce pan, add the butter and the remaining water and bring to a boil and simmer for few minutes. Add salt and pepper to taste.  Serve warm with a warm dinner rolls.

how do you make vegetable broth? I usually use just water too but find that sometimes it's not tasty enough. Thanks!

I mentioned veg broth or water. I use water most of the time for my soups.
