  • 1 cup All Purpose Flour (Maida)
  • 1/2 cup Ragi Flour (Finger Millet/ Nagli)
  • 1/2 cup Cocoa Powder
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1-1/4 cup Brown Sugar (Demerara Sugar)
  • 1 teaspoon Vanilla Extract
  • 1 cup Milk , or almond milk (for vegan option)
  • 1 cup Oil
  • 1 cup Ripe Bananas , mashed
  • To Make Flax Meal Egg Replacer
  • 3 tablespoons Flax seed powder (flax meal)
  • 9 tablespoons Chilled water

How to make Eggless Ragi Banana Chocolate Cake Recipe-Vegan Options

  1. To begin making the Chocolate Banana Finger Millet Cake Recipe, first get all the ingredients ready.

  2. Next, preheat the oven to 180 C and grease and flour a large loaf pan or a springform pan or a bundt pan. 

To make the Flax Meal Egg Replacer 
  1. If your recipe asks for 3 eggs, measure 9 tablespoons of flax meal along with 6 tablespoons of water. Stir well and let the mixture rest for about 15 minutes. This process of resting helps the flax meal mixture develop a gelatinous consistency similar to eggs.

To Make the Batter 
  1. Sift the flours, cocoa powder, along with baking powder and salt. Keep aside. I like to double sift the flours as it incorporates a good amount of air.

  2. In a large bowl or the bowl of a KitchenAid Stand Mixer; add in the oil, sugar, Flax meal Egg Replacer, vanilla essence and milk. Beat together all the ingredients until combined.

  3. Gradually beat in the flour mixture and finally the bananas. Beat until all the ingredients are well combined. 

  4. Pour the cake batter into the greased pan, place it into the oven to bake for about 35 to 45 minutes until a tester when inserted inside comes out clean.

  5. Once the chocolate banana cake is baked, allow it to cool for a little bit before you can cut into slices.
