Eggless German Apple Cake Recipe

A light and fluffy apple cake that is super delicious and is baked with simple ingredients. Apples and cinnamon are like match made in heaven. This cake is perfect for those tea time parties or even dinner when topped with some warm rum custard.

Eggless German Apple Cake Recipe

German Apple Cake is one of my favorites, because it is lightly, feathery and fluffy. When I bake them I like to place the apples in there layers. One at the bottom of the pan, one that is combined into the batter and one layered neatly on the top sprinkled with brown sugar. Super delicious. This cake is perfect for those tea time parties or even dinner when topped with some warm rum custard.

Ingredients

  • 2 cups All Purpose Flour (Maida)
  • 1 teaspoon Baking powder
  • 2 teaspoons Cinnamon Powder (Dalchini)
  • 1/2 teaspoon Salt
  • 1 cup Oil
  • 2 cups Caster Sugar
  • 1 teaspoon Vanilla Extract
  • 4 cups Apples , peeled, cored and diced/sliced
  • For Flax Meal Egg Replacer
  • 2 tablespoons Flax seed powder (flax meal)
  • 6 tablespoons Chilled water

How to make Eggless German Apple Cake Recipe

  1. To begin making the German Apple Cake Recipe, first preheat oven to 180 C. Grease and flour a square or a round springform cake pan. 

To Make Flax Meal Egg Replacer 
  1. If your recipe asks for 2 eggs, measure 2 tablespoons of flax meal along with 6 tablespoons of water. Stir well and let the mixture rest for about 15 minutes. This process of resting helps the flax meal mixture develop a gelatinous consistency similar to eggs.

To make the batter 
  1. In a large bowl sift the flour, salt, baking powder and ground cinnamon and keep aside.

  2. In a mixing bowl or a bowl of the stand mixer; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well. Gradually add in the flour mixture and beat well until well combined.

  3. The batter will be very thick at this stage. Fold in the apples by hand using a wooden spoon.

  4. Spread batter into the prepared cake pan. Place it in the preheated oven and bake for about 45 minutes or until when a tester inserted in the center of the cake comes out clean.

  5. Once the german apple cake is baked, remove from the oven and allow it to cool.

  6. Once cake is cool serve the German Apple Cake dusted with confectioners' sugar or with a Cream Cheese Frosting.

  7. Serve the German Apple Cake along with Homemade Hot Chocolate with Whipped Cream or Masala Chai to make your evening special with friends.
