- 3 large hard boiled eggs, peeled and chopped
- 1 tablespoon mayonnaise
- 1 tablespoon olive oil
- 1/3 cup scallions, finely chopped
- 1/3 cup sun dried tomatoes, finely chopped
- 1 teaspoon lemon juice
- 1 teaspoon thyme, finely chopped
- salt and pepper to taste

To begin making the Egg Salad Recipe With Sun Dried Tomatoes and Scallions, we will first boil the eggs into hard boiled eggs.
To hard boil eggs, place eggs in a pot and fill it with water. Bring it to a boil. Once the water starts boiling, switch off the flame and cover the pot. Let this sit for 12 minutes, after which you can cool the eggs under running water and remove the shells.
Once the eggs have cooled, cut them into quarters.
