To begin with Tostadas, preheat the oven to 400-degree Fahrenheit. Grease the tortillas using oil on both the sides. Arrange tortillas on a baking sheet and bake for 5-6 minutes, until it is browned.
Flip on the other side and bake for another 5 minutes.
Alternatively, you can use a skillet to heat and lightly roast the tortillas. Pour oil in the skillet and heat oil over medium heat. Once hot, place the tortillas in the skillet for 30 seconds, until it is browned to your liking. Flip on the other side and cook until it is browned. Set it aside.
Boil corn with salt. Add lemon juice and pepper and mix them well. Chop avocado thinly and combine with the corn mixture.
Top the tortillas with corn mixture and sprinkle grated cheddar cheese on top. Garnish it with coriander leaves and it is ready to be served.
