Gluten Free Rice Flour Dough Pizza with Roasted Mushrooms and Peppers and Feta Cheese

Dont know what day it was, but it was a Gluten free pizza for dinner. I accidentally prepared the dough with rice flour. I said ouch to myself and nevermind as well. So I quickly decided to create a recipe with the ingredients at home and let the dough rice with rice flour. I let the dough rise and yes did it rise. I felt elated. And dinner was Archana's Gluten Free Rice Flour Pizza - with roasted vegetables and feta cheese. Children Loved and I was happy it was super healthy! 

 

 

And yes it is a wheat and gluten free pizza crust that is perfect for those with allergies.
I retried this recipe with a different twist as I had comments from a few that it did not turn out well. On the day I made it, it was hot out of the oven and was perfect. A lot depends on the type of rice flour you use. In india fresh rice flour is readily available in the market. 

If you dont eat potatoes, you can also had tapioca flour (2 cups rice to 1 cup tapioca flour), as they will add to the softness of the crust. I added potatoes the second time, but the first time around it was an accident.

Hope you enjoy some of the modifications and enjoy eating gluten free. Although you have to understand that making pizza from rice flour is not as easy. Some recipes use xantham gum, may be you can try using some gum to add to better texture.

Ingredients Pizza Crust

2 1/2 cups white rice flour

1/2 cup boiled and mashed, creamy potatoes

1 tablespoon granulated sugar

1/2 teaspoon salt

2 1/4 teaspoons instant dry yeast

1/2 cup very warm water

1/2 cup cold milk

2 tablespoons olive oil, plus more for brushing

Topping Ingredients

1 recipe tomato basil sauce

Feta Cheese

Roasted zucchini, mushrooms, red peppers, onions (slice or chop vegetables and roast them on a wok with olive oil and salt)

Pizza seasoning

Method for crust

Preheat oven to 250 C.  Using a stand mixer or hands, combine the yeast, flour, potatoes, sugar and salt. Gradually add the warm water and milk, until well combined. Finally add a tablespoon of olive oil and knead further until smooth. The dough will resemble soft dough. All the dough to rest for about an hour. 

Dust a parchment paper to the size of the pizza pan with rice flour. Dust the dough generously with white rice flour and roll out the dough on the parchment paper. Bake pizza crust for 10 minutes.

Remove from oven. Top the pizza crust with sauce, the roasted vegetables, pizza seasoning and feta. Bake for another 15 to 20 minutes or until the crust is nicely browned.

Remove from oven and serve.

I tried the recipe and agree that it was misssing something. So I took what worked with my normal pizza dough and added some components to the recipe.
1 Tbsp of italian seasoning
1tsp garlic powder
1/2 tsp onion powder
Here is the major Mod instead of oil I used
1/4 cup of margarine

I combined the margarine by hand until the rice flour was the consistency and size of peas. I then followed the recipe. The margarine when it bakes creates steam which creas tiny pockets. The dough was lighter and more moist. Try it let me know what you think. I haven't tried a 2nd batch. I am hoping its not a fluke. Eat Healthy everyone.

There is definitely something missing, about 2/3 cup of water I think. That's what I added to above ingredients to make a workable dough. I first dissolved the yeast in the warm water then added that to the dry ingredients. To that I added the eggs, oil and extra 2/3 cup of water. I Will let you know how it tasfes after lunch.

Pizza turned out amazing, and I used spicy italian sausage topping and buffalo, and added some butter in the crust. There is always room for the improvisation! It was amazing! Thank you! :D :-)

So dry, what a disaster ! Made exactly according to directions & turned out super dry, cracked during prebake. Don't waste your time :-| :-|
