 A very famous tiffin dish in Southern India. Pongal festival is to celebrate the harvest festival and the first day of the Tamizh (Tamil Calendar Month) month. It is a festival that is spread over four days. Pongal in tamil means something that is overflowing. This mouth watering dish, a kichadi (one can call for the northern Indians), is savored with eggplant ghotsu (south Indian version of eggplant in tomato gravy) or a vegetable kootu( vegetables and dal in coconut gravy). |

 A dosa that is packed with protein and fiber is a delicious alternative to a bland porridge. Ragi, Oatmeal and Soy flour are whisked together and spiced up with green chillies, coriander leaves and cumin. The result is an absolutely delicious flavor and packing you up with all that energy. This has always been a quick fix meal for me when I run out of groceries. My children enjoy these dosa's for breakfast or dinner. It taste great with just a cup of yogurt, but I love to serve it with a spicy home made tomato sauce. |

 Surely oats can be enjoyed in this form, as a variation to the porridge. Oatmeal is whisked together and spiced up with green chillies, coriander leaves and cumin. The result is an alboslutely delicious flavor and packing you up with all that energy. This has always been a quick fix meal for me when I run out of groceries.  This tangy snack is an all time favorite breakfast dish throughout India with slight variations. Made with flattened rice and potatoes makes seasoned with green chillies, onions, coriander leaves and lemom, makes it a sumptuous and healthy breakfast or a tea time snack. Serve it warm with a hot cuppa chai and some sev bujia.
