- 1 Ripe Bananas , (overripe is better) mashed well
- 3 tablespoons Peanut Butter
- 1/3 cup Hung Curd (Greek Yogurt)
- 4 tablespoons Olive Oil
- 1 Whole Egg
- 1/2 cup Caster Sugar
- 1/2 cup Whole Wheat Flour
- 1/2 cup All Purpose Flour (Maida)
- 3/4 teaspoon Baking soda
- 1/4 teaspoon Baking powder
- 1 teaspoon Vanilla Extract
- 1/4 cup Bitter sweet chocolate , chopped
How to make Banana, Peanut Butter And Chocolate Chunk Loaf Recipe
In a large mixing bowl, mash the banana using a fork, till it is a smooth pulp. Add the peanut butter to it and whisk to combine. Next, add the curd, oil and vanilla extract and whisk all together till smooth. Set aside.
In another bowl, whisk together the eggs and sugar using a hand mixer until it is light and creamy in texture
In a large bowl sift the flours, baking soda and baking powder together. Make a well in the centre, and pour the egg and sugar mixture.
Combine by gently folding the mixture with a spatula till no lumps of flour remain. Slowly pour in the peanut butter mix, and gently fold it to form a smooth and shiny batter.
Pour the Banana, Peanut Butter batter into the prepared loaf pan, sprinkle the chopped chocolate chunks on top generously.
Bake the cake for 30-35 minutes or until a toothpick inserted at the centre comes out clean.
