Planning a Lunch box meal everyday is a hard task for people who go to work everyday as well as for the homemakers who run out of ideas on what to pack for their kids which is healthy and delicious. It is usually dishes that are made in the morning which are packed for the afternoon boxes also, but do not worry at Archana's Kitchen we have come up with a variation to paratha which can be packed and made quickly as well.
This week's Lunch box includes a paratha which is filled with Protein. As North Indians are experts in making the stuffed paratha, they do have a lot of variation going in their stuffing. So we have thought a bit ahead by adding a healthy twist to it. Adding oats will help you gain good amount of dietary fibers that is required for your day to day energy. The accompaniments that goes along with this paratha is kept simple by adding a dollop of the Instant Tindora & Carrot Pickle. Crispy tindora (ivy gourd/tondekai) and sweet carrots are sauteed in gingelly oil, mixed with spicy South Indian style pickle masala powder. Adding yogurt helps to satisfy the dryness from the parathas, as well as helps in digestion. We have added a Grape based yogurt just to add in some extra crunch to your meal as grapes are in season.
The Meal can be complete with a sweet snack by adding some Healthy Chewy Strawberry Cookie with Oats.
