To make Baked Frittata with Pasta and Vegetables, preheat oven to 180 C. Grease baking dish with little butter.
Heat oil in a heavy bottomed pan; stir fry the vegetables on high heat until slightly softened and cooked but still crunchy.
Next whisk the eggs in a bowl, stir in the chopped parsley, salt and pepper. Keep aside until required.
Boil the pasta in hot salted water until cooked. Drain in a colander and rinse under cold water.
Arrange the pasta on a butter greased baking dish. Pour the egg mixture over this and mix well with a fork. Sprinkle the grated cheese on top.
Place the dish in the oven bake for about 30 minutes or till the cheese has melted and the eggs are cooked.
Alternately, this mixture can be poured into a skillet pan and cooked on stove top. Keep the pan closed with a lid and you will be able to see the mixture turn into a thick pancake.
Once cooked, remove from the oven. Allow the frittata to rest for a few minutes before serving.
