Microwave Nylon Khaman Dhokla is a very popular Gujarati delicacy that is had as a snack . Traditionally, its prepared in steamer which takes a little longer to make. But this recipe uses the microwave and it turns out to be just as delicious as the ones we get at the Farsan store. It is spongy, juicy and delectable.

    Main Ingredients
  • 1 cup Gram flour (besan)
  • 2 tablespoon Sooji (Semolina/ Rava)
  • 1/8 teaspoon Turmeric powder (Haldi)
  • 2 teaspoons Sugar
  • 2 teaspoon Lemon juice
  • 1 inch Ginger , grated
  • 2 Green Chillies , pounded into paste
  • 1 teaspoon Enos fruit salt
  • 1 cup Water , as required
  • Salt , to taste
  • Ingredients For Seasoning
  • 1 tablespoon Sunflower Oil
  • 1/4 teaspoon Mustard seeds
  • 1/4 teaspoon Sesame seeds (Til seeds)
  • 1/4 teaspoon Asafoetida (hing)
  • 3 tablespoons Water
  • 4 sprig Coriander (Dhania) Leaves , chopped for garnish

How to make Microwave Nylon Khaman Dhokla

  1. To begin making  Microwave Nylon Khaman Dhokla , take all dry ingredients (except Eno) of Khaman in a bowl and mix them well. Add water gradually to make smooth batter of pouring consistency taking care that there are no lumps present. Grease a deep microwave proof dish (or baking tray) with 2-3 drops of oil.

  2. Add enos fruit salt to batter and whisk it for 2-3 mins to make the batter fluffy. Pour pour the batter into to the greased dish and cover tightly with cling wrap. Microwave it on high for 4-5 minutes and take it out by removing the cling wrap.

  3. Allow it to rest for 5 minutes and then cut the khaman dhokla into square pieces. Transfer all the pieces to serving plate/bowl. Heat oil in small pan; add mustard seeds. Once it splutters, add sesame seeds and asafoetida into it.

  4. Turn off the heat and add water. Pour this watery seasoning over all Nylon Khaman Dhokla evenly and garnish with chopped coriander and serve.

  5. Note - Citric Acid (limbu na phool) can be used to replace lemon juice. - Make sure cling wrap doesn't touch your khaman at all. A microwave proof lid can be used instead.

  6. Serve Microwave Nylon Khaman Dhokla along with Green Chutney and  Masala Chai as a tea time snack.
